Skinny Pumpkin Pie Latte

Did you know that a medium Pumpkin Spice latte from Starbucks has half a day’s worth of saturated fat and almost 50 grams of sugar? Unfortunately, most hot chocolates and seasonal coffee drinks aren’t much better, but we’ve cooked up a great alternative that serves up the same cozy feeling with less guilt. This recipe makes enough for two, so invite a friend over and celebrate fall! 

First, make the Pumpkin Pie Spice Syrup:

1 c. water

2 tsp. pumpkin pie spice

2 1/2 tbl. canned pumpkin puree

Bring water to a simmer and add remaining ingredients. Stirring often, cook for 5 minutes. Strain through a mesh or cheesecloth strainer into a storage container.

 

Next, prepare the drink:

2 c. almond milk (or skim)

2 shots espresso (or instant powder)

Choice of sweetener

Warm 2 cups of almond or skim milk and add 2 shots of espresso (or 2 tbs instant espresso powder). Add in the spiced syrup and sweetener to taste. I like a mixture of maple syrup and stevia for a great taste without so many calories! Add a little whipped cream or nutmeg to top it all off.
Serves 2
